- 1 lb 93% lean ground turkey
- 1 tbsp olive oil spray
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes with green chiles, drained
- 1 tbsp taco seasoning
- 4 cups riced cauliflower
- 1/4 cup reduced-fat shredded cheese, optional
- Salt and black pepper to taste
- Optional toppings: sliced jalapeños, diced tomatoes, avocado slices, plain Greek yogurt, lime wedges

Heat olive oil spray in a large skillet over medium-high heat and cook the ground turkey until browned, breaking it up as it cooks.
